Wednesday- Tiajuana Taco Dip
Thursday – Crockpot Chicken Hobos

This dish is pretty filling… another one that we often eat as a meal.  It’s a great meal for a movie or for watching a game!
Tiajuana Taco Dip
1 – 16 oz. can refried beans
1 c. salsa
1 tsp. red hot sauce
1 lg. tomato, chopped
3/4 c. mont. jack cheese, grated
1/2 lb. ground beef
2 tsp. chili powder
1 cup black olives, sliced
1 c. grated Cheddar cheese
1 c. sour cream
Garnishes – chopped green onions, black olives, tomatoes,
Tortilla chips
Preheat the oven to 350 degrees.  Mix together refried beans, salsa (3TBPS) and 1/2 tsp. hot sauce.  Spread this …

Growing up, this recipe was a favorite at my house.  I haven’t made these in so long, but thinking ahead to the Superbowl this weekend, these might be just the thing to serve!
Japanese Chicken Wings
2 lbs. chicken wings
1 large jar apricot baby food (or 1 cup apricot jam)
1/2 tsp. ginger
1 large garlic clove, minced
1/2 cup soy sauce
Separate wings into two pieces at joint.  You may discard the tips, if desired. 
Combine remaining ingredients in a large bowl; add in the wings and coat thoroughly.

Heart-Shaped Cupcake Cake

My hubby helped me put this together this morning…  I knew there had to be a way this could work but not being much of a puzzle person, it was he who actually put the design together.
Using the silicone cupcake cups from the Build-A-Cake set I told you about, we arranged the cups in the shape of a heart!  Now, all I need is a box of cake mix, to bake the cake, and decorate the top with lots of chocolate frosting, M&M’s, and hearts!

Menu Plan Monday

Monday – Ham and Potato Casserole (I’m looking to use up the Velveeta cheese we have leftover from New Year’s Eve dip recipes - if anyone has other ideas for using up Velveeta, please let me know!)
Tuesday – Whole Chicken in the crockpot (I’m taking it out about a half hour before we eat to put it in the oven at 350 – it helps the skin to be more crisp!), Noodles with butter and Savory, Peas

My Walgreens trip: Spent $1.96, saved over $7

 
Yesterday, the kiddos and I made our trip to Walgreens.  I was excited to be able to get a few treats for just a couple dollars!  The Chex mix, I plan to save to put into little baggies to take along to church on Sundays.  Our service ends at the time that we normally eat lunch so I like to have a snack for Bubba to eat in the car on the way home (I have found that this keeps him much happier after his tiring morning out and helps …

Make your own cake plate!

Friday night was Bubba’s second birthday party with hubby’s family.  I was really excited about the Train Build a Cake that we had put together to serve for the party…  Until I went to find a plate or something to put the cake on – and found that anything I had that was big enough was packed away in boxes due to our transitional living state!
