Another Game Day Recipe: Tiajuana Taco Dip

This dish is pretty filling… another one that we often eat as a meal.  It’s a great meal for a movie or for watching a game!

Tiajuana Taco Dip

1 – 16 oz. can refried beans

1 c. salsa

1 tsp. red hot sauce

1 lg. tomato, chopped

3/4 c. mont. jack cheese, grated

1/2 lb. ground beef

2 tsp. chili powder

1 cup black olives, sliced

1 c. grated Cheddar cheese

1 c. sour cream

Garnishes – chopped green onions, black olives, tomatoes,

Tortilla chips

Preheat the oven to 350 degrees.  Mix together refried beans, salsa (3TBPS) and 1/2 tsp. hot sauce.  Spread this in 1.5 quart casserole dish.  Top with chopped tomatoes and mont. jack cheese. 

Cook beef with the chili powder; drain fat.  Stir in the remaining salsa, hot sauce, and the olives.  Spread this over mont. jack cheese in dish.  Sprinkle evenly with the cheddar cheese. 

Bake for 15-20 minutes, until heated through. 

Spread sour cream over top (or serve separately).  Garnish as desired. 

Serve with tortilla chips.

I have made this dish without the tomatoes if I don’t have any on hand – it still turns out tasting great!  Also, for our family, I don’t serve it with sour cream since we aren’t huge fans.

    This IS yummy! If you don’t have a fresh tomato on hand, we’ve substituted canned, drained, diced tomatoes and this works well. We also enjoy eating this dip rolled up inside a warm tortilla. Enjoy the game!

    And the best part of it, Melissa, is that it’s so easy to make! And the leftovers are just as good as, if not better than, freshly made! :)
